Brie's cousin — a smaller wheel, so proportionally more rind, and a deeper, more savory flavor.

TasteDeeper mushroom and damp-earth notes than Brie, over a rich savoriness. A ripe one adds truffle and a frank barnyard note — if Brie struck you as mild, this is where the two part ways.
TextureCreamy and soft, eaten rind and all. The wheel is small — about 11cm across, 3cm thick, 250g — so rind makes up more of every bite than in Brie, and ripeness shows more dramatically.

How it differsBrie is the usual mix-up, and size is the first tell: camembert is a small whole round, brie a large wheel sold in wedges. Brie has more fat and tastes butterier; camembert runs more when ripe and smells grassier, earthier, more mushroomy. Side by side, the richer one is brie and the louder one is this.

How to enjoy
Thirty minutes out of the fridge and straight onto bread, or score the top and bake at 180–200°C for 15–20 minutes and scoop it out. Bake it in the box only if that box is real wood held by nails or staples — and always strip off any plastic.
What to look for
You buy this whole, so pressing it is the reliable test — out of the box, a gentle press should give in the centre. If it feels solid, a few days near room temperature will finish it. Reddish blotching on the rind, or a box that has gone damp inside, means it has gone too far.
Storage
Refrigerate in its original wooden box or paper. Sealed tight in plastic the rind can't breathe and turns ammoniated. Ripening all but stops once it's cut, so finish it within a week.

Good to know
From the village of Camembert in Normandy — but only 'Camembert de Normandie' (AOP) is a protected name, made from raw Normande cow's milk with the curd ladled in five separate passes and ripened at least 21 days. The wooden box was invented in 1890 to stop the cheese being crushed in transit, and it simply stayed.
