Cheeses that melt and cheeses that do not

Why some cheese stretches into ropes and some sits there unbothered by heat — the mechanism, the right cheese for each job, and how to rescue a broken sauce.

Melting is two things happening at once

Cheese is fat droplets trapped in a web of protein and water, and that protein web is held together by calcium. Apply heat and two things start simultaneously: the solid fat turns liquid, and the calcium bonds between proteins loosen so the web can stretch. When those two line up you get the state everyone wants — stretchy, glossy, and not weeping oil. Nearly every failure involving cooked cheese is that balance going wrong somewhere.

Young cheese melts, old cheese breaks

A young cheese still holds plenty of water and its protein web is slack, so heat persuades it to stretch. A long-aged cheese has lost that water and its proteins have knotted tightly together, so the web will not relax — instead the fat melts and leaves on its own, which is the puddle of oil you end up with. So a mature cheese refusing to melt is a structural fact, not a quality problem. Choose young when you want stretch, old when you want flavour.

The ones for pizza and gratins

Enough moisture, not much age, and proteins that come apart willingly. Stretching and melting are not the same property, though. The long pull belongs to the mozzarella family, whose curd is stretched in hot water as it is made; a semi-hard cheese does not pull like that, it flows smoothly and brings flavour with it. Which is why a good pizzeria mixes the two. Try to do both jobs with a single cheese and you get either a magnificent stretch that tastes of nothing, or good flavour that sits there stodgily.

The ones you grate for savour

Long-aged hard cheeses are there to add flavour rather than to flow. Add them to pasta or soup off the heat, or they clump. Cacio e pepe — cheese, pepper and nothing else — is a dish built entirely on this property. The trick is temperature: added to something boiling, the proteins seize before they disperse and the fat separates. Kill the heat, let the pan drop a little, then add. Those few seconds are the whole difference between a glossy sauce and a grainy one.

Some cheeses simply do not melt

Acid-set cheeses have proteins that are already locked together in a different way, without the loose calcium bridges that heat undoes — so there is nothing for heat to release. That is the design, not a defect, which is why they go into lasagne and desserts as they are. Indian paneer works exactly this way, which is how it survives a simmering curry intact. Cheeses cooked in hot whey during making behave the same way — Cypriot halloumi and Brazilian queijo coalho among them — and are built expressly to be grilled: it browns on the outside and stays squeaky within. Put it in a dry pan, colour both sides, and dinner is essentially done.

Temperature decides everything

Most cheeses begin softening somewhere around 55 to 65°C (130 to 150°F) — soft ones sooner, hard ones later. Push past that and the web that was stretching contracts instead, squeezing out water and fat. That is the moment it breaks. Which is why almost all cheese cookery happens over low heat. Even with a gratin, it is better to warm the inside gently and only blast the top for the last couple of minutes to get colour.

Keeping a sauce from splitting

A cheese sauce that separates into oil and lumps has almost always been overheated. Work on a low flame, add the cheese in small handfuls, and use a starchy liquid — pasta water is ideal — because the starch holds the fat droplets in suspension. A splash of white wine or lemon juice helps too, since mild acidity slows the proteins from knotting. And go carefully with blue cheese: add half of what you planned and taste before committing.

Sodium citrate, the acceptable cheat

There is one reliable way to make cheese sauce that never fails: add sodium citrate at about 2 to 4 per cent of the weight of the cheese. It takes the calcium away from the proteins, which frees them to act as emulsifiers themselves, and then any cheese melts smoothly — a sharp aged cheddar included, with no lumps at all. This is not a new invention. It is precisely why wrapped processed slices melt so obediently: they were made with emulsifying salts. You are simply doing at home what the factory does. It is easy to buy online, and one batch of nacho sauce will convince you.

Where the cheat works best:

Bagged shreds behave differently from cheese you grate

Pre-shredded cheese usually contains potato starch or cellulose to keep the strands from clumping, and that changes how it melts. In anything that has to melt properly — a sauce, a fondue — the difference is obvious. Buy a block and grate it yourself. For pizza and other baked dishes the gap is small, so use whichever is convenient. If you are grating by hand, chilling both the cheese and the grater in the freezer for a few minutes makes the job far easier.

Getting a browned top

Browning needs protein and sugar together. Fresh mozzarella is high in water and low in sugar, so it can sit under heat for a long time producing liquid rather than colour. Pizzerias get around this with low-moisture mozzarella or by blending in another cheese. At home, scatter a little parmigiano or gruyère over the top, and breadcrumbs if you want to be certain. Turning the top heat up for the final two or three minutes does the rest.

Rinds and offcuts are ingredients

The rind of a hard cheese is too tough to eat but full of savour when simmered in liquid; fish it out when you are done. Italian households keep parmigiano rinds specifically for minestrone, and they work just as well in a Korean soybean stew. Offcuts of several different cheeses, grated together into a gratin or a macaroni, actually give a more layered result than one cheese would. Mixing types feels like a mistake and, in anything melted, usually is not.

If it has already split

Do not throw it out — most splits are reversible. Drop the heat as low as it goes and whisk in cold water or milk a spoonful at a time. Cooling it while restoring moisture brings it back more often than not. If that fails, a little starch slurry usually will, and failing that, tip the lot into a blender and pulse it briefly. To avoid the problem next time, simply reverse the order: heat off first, cheese second.
